As a dabbler, I do say that philosophy of wine-making just makes good sense.  I know that a lot of the California wineries have been criticized for being too technical and technological.  I do wonder, though, if the whole &quot;we just wanted to make it taste good&quot; might be a way of saying, &quot;there&#039;s a lot of additives.&quot;  As a professional, can you set the record straight?</description>
